Easy-to-Make Winter Recipes
Winter is officially here, bringing a whole new menu of healthy, nutritious comfort food. As the weather gets colder, many vegetables are coming back into season, such as kale, carrots, beets, winter squash, and pumpkins.
We’ve gathered our favorite nutritious and easy-to-make winter recipes. Not only do these recipes include only a few ingredients, but they are also healthy for you and your family.
ONE-SKILLET APPLE CIDER SWEET POTATO CHICKEN
- 4 chicken thighs (or more, depending on family size)
- 2 apples
- ¾ cup of apple cider
- 1 onion
- 1 sweet potato
- Dijon mustard
Sauté chicken in a medium to large pan. Add in sweet potato chunks, apples, and onions. Add in your favorite seasoning (thyme and garlic powder would be great). Add in apple cider and Dijon mustard (to taste). Let simmer for sauce to thicken.
FLOURLESS PUMPKIN BREAD
- 2 cups of oats
- 1 can of pumpkin puree
- ½ cup of maple syrup
- 2 eggs
- 1 tsp of baking soda
Add all ingredients to a blender and blend until smooth. Place in loaf pan and bake for 30 minutes at 350 degrees. Let cool before eating.
CINNAMON SUGAR APPLE SALAD
- 4 of your favorite type of apples (we like honey crisp!) sliced into one-inch pieces
- 2 tsp of lemon juice
- 1 tsp of cinnamon
- 1 tsp of sugar
Mix all ingredients in a mixing bowl, starting with lemon juice on the apples, until apples are fully covered. You might not need the full amount of cinnamon and sugar. Serve immediately.
